Chef de Partie - Middle Eastern & Moroccan cuisine

About the role

Raffles Al Areen Palace Bahrain is seeking a talented Chef de Partie to lead the preparation of Middle Eastern and Moroccan dishes in our ultra‑luxury property. You will work closely with the Executive Chef to ensure every plate meets the highest standards of taste, presentation, and safety.

Key responsibilities

• Supervise, coordinate and participate in the preparation of all mise‑en‑place and menu set‑up.
• Determine daily production quantities based on occupancy, functions and replenishment needs.
• Prepare requisitions for groceries and perishable items.
• Dispense food against micros checks and ensure accurate portioning.
• Taste all food during preparation to guarantee quality.
• Maintain proper use and handling of kitchen utensils and equipment.
• Ensure food leaving the kitchen is correctly seasoned and beautifully presented.
• Keep all utensils, cooking equipment, work tables and cold rooms clean at all times.
• Store leftovers properly after each function to prevent spoilage.
• Perform any additional duties assigned by the Executive Chef.

Required profile

• Proven experience as a Chef de Partie or equivalent in a luxury hotel or fine‑dining establishment.
• Culinary degree or diploma preferred.
• Strong knowledge of various cuisines, cooking techniques and international culinary trends.
• Excellent leadership, communication and interpersonal skills.
• Ability to thrive in a fast‑paced environment and handle pressure professionally.
• Flexibility to work evenings, weekends and holidays.
• Knowledge of HACCP and food safety standards.
• Passion for culinary excellence and continuous learning.
