About the role
The Galley Manager leads all aspects of food service operations at ISA BOS, overseeing a team of approximately 12 local nationals. The role ensures that daily meals for over 120 patrons meet Navy nutritional standards and are delivered efficiently.
Key responsibilities
- Supervise and direct a crew of food service workers, ensuring compliance with sanitation and safety training.
- Develop and implement a 28‑day cycle menu in accordance with NAVSUP P‑486 guidelines.
- Manage subsistence supplies using the Food Service Management (FSM) system, maintaining adequate stock for a 30‑day supply cycle.
- Maintain equipment accountability, serviceability, and schedule routine and emergency maintenance.
- Oversee cashier services for Ration‑in‑Kind eligible patrons and paying customers.
- Ensure all meals meet Nutritious and Acceptable Meal standards and that proper cooking techniques are applied.
Required profile
- High school diploma or equivalent; associate degree in culinary or food management preferred.
- Two years of related food service experience, or equivalent education.
- Formal chef training or comparable culinary certification.
Required skills
- Proficiency with the Food Service Management (FSM) system.
