New Product Development Pastry Chef

About the role

We are looking for a New Product Development Pastry Chef to lead the creation and improvement of dessert and pastry items for Calo’s menu and retail range. Working within the NPD team, you will design, test and scale recipes that meet our nutritional standards while delivering great taste and presentation.

Key responsibilities

• Design and develop new pastry and dessert products aligned with brand positioning and nutritional guidelines.
• Formulate, test and refine recipes, focusing on taste, texture, cost and scalability.
• Modify existing products based on feedback, operational needs and cost considerations.
• Collaborate with nutritionists, procurement, operations and production teams to ensure feasibility and quality.
• Maintain accurate documentation of recipes, yields, ingredients and production instructions.
• Ensure compliance with food safety, hygiene and quality standards throughout development.
• Support scaling of products and assist in training kitchen and production staff.

Required profile

• Culinary Arts degree or equivalent qualification.
• Professional experience in pastry or baking.
• Proficiency in English; Arabic is a plus.
• Strong knowledge of pastry techniques, textures and ingredient functionality.
• Detail‑oriented, organized and able to manage multiple tasks.
• Understanding of food safety and hygiene standards.
