Hygiene Officer

About the role

The Hygiene Officer will ensure the highest standards of food safety, hygiene and sanitation across all hotel departments, in line with local regulations, HACCP and Accor standards.

Key responsibilities

• Implement and maintain HACCP principles, ensuring all food safety protocols are adhered to.
• Conduct routine hygiene audits and inspections in all F&B outlets, kitchens and storage areas.
• Monitor food handling practices, personal hygiene of staff and cleanliness of equipment.
• Oversee sanitation procedures, waste disposal and back‑of‑house cleanliness.
• Liaise with external pest‑control providers to manage effective pest control.
• Investigate hygiene‑related complaints, take corrective action and maintain accurate documentation.
• Report non‑compliance or food safety risks to senior management.
• Collaborate with culinary, stewarding and F&B teams to promote best practices and support sustainability initiatives.

Required profile

• Bachelor’s degree in Food Safety, Microbiology, Hospitality Management or a related field.
• Minimum 2–3 years of experience in a similar role within luxury hospitality.
• HACCP certification is mandatory.
• Strong knowledge of local and international food safety standards.
• Excellent communication and training abilities.
• Detail‑oriented with strong analytical and problem‑solving skills.
