Catering Controller

About the role

We are looking for a proactive Controller to oversee external catering operations, ensuring seamless service delivery and strong client relationships. The role involves managing menus, inventory, staff scheduling and quality control for catering units serving airport and hotel customers.

Key responsibilities

• Develop and update external catering menus, including brochures, aligned with customer preferences and market trends.
• Coordinate with internal departments to secure equipment, supplies and timely service for events.
• Maintain optimal stock levels, monitor waste and analyse meal portions to control costs.
• Conduct on‑job training for team members and perform regular spot checks on food and service quality.
• Manage administrative tasks such as staff schedules, overtime records, daily catering logs and statistical reporting.
• Ensure pricing, availability and accuracy of catering menus are up‑to‑date and competitive.
• Comply with company, airport authority health, safety and security standards.
• Undertake any other duties assigned by management.

Required profile

• Bachelor’s degree or equivalent work experience.
• 3–5 years of experience in institutional catering or first‑class hotel operations.
• Excellent communication, organizational and coordination abilities.
• Detail‑oriented with a results‑focused mindset.
• Ability to work effectively in a culturally diverse environment.
