Culinary Director

About the role

Mantis is seeking an experienced and dynamic Culinary Director to lead all culinary operations at Hawar Resort. You will be responsible for upholding the resort’s luxury standards, driving menu innovation, and ensuring guest satisfaction across every dining venue.

Key responsibilities

• Oversee culinary operations across the resort, aligning with brand standards and operational excellence.
• Develop and execute authentic Italian cuisine concepts, menus, and dining experiences.
• Maintain the highest standards of food quality, taste, presentation, and temperature.
• Drive innovation in menus, concepts, and food presentation to enhance guest experience.
• Collaborate with Marketing and F&B leadership on promotions and destination dining experiences.
• Manage stock levels, purchasing, receiving, and storage while controlling costs.
• Lead, train, coach, and develop culinary teams, including succession planning.
• Ensure compliance with HACCP guidelines, hygiene standards, and food safety regulations.

Required profile

• Proven experience leading culinary operations in a luxury resort or hotel environment.
• Strong track record in menu development, cost control, and talent management.
• Ability to innovate and maintain consistent food quality across multiple venues.
• Excellent communication and teamwork skills.
