Food & Beverage Manager

About the role

The Food & Beverage Manager will lead all F&B venues and dining experiences, ensuring exceptional guest satisfaction, operational efficiency, and profitability across Mantis’ conservation‑focused hotels and eco‑lodges.

Key responsibilities

• Lead and oversee daily Food & Beverage operations to deliver outstanding guest experiences.
• Drive sales and revenue through innovative promotions, upselling, and guest engagement initiatives.
• Develop, manage, and monitor departmental budgets, forecasts, and financial performance.
• Implement cost‑control measures for food, beverage, labor, and overall expenses.
• Analyze Profit & Loss statements and execute action plans to meet financial targets.
• Maintain and continuously improve Standard Operating Procedures and service standards.
• Ensure compliance with company policies, brand standards, health and safety regulations, and local legislation.
• Lead, motivate, coach, and develop the F&B team to achieve operational excellence.
• Build strong relationships with guests, suppliers, and internal stakeholders.
• Monitor guest feedback and implement corrective actions to enhance satisfaction.
• Collaborate with culinary and service teams to evolve food and beverage offerings.
