Demi Chef de Partie – Middle Eastern & Moroccan Cuisine

About the role

Raffles Al Areen Palace Bahrain is seeking a motivated Demi Chef de Partie to support the Middle Eastern and Moroccan cuisine section. You will work closely with the Chef de Partie to ensure high culinary standards and seamless service in an ultra‑luxury hotel environment.

Key responsibilities

• Control and maintain the assigned kitchen section, ensuring compliance with Raffles standards.
• Prepare and cook menu items daily according to recipes and portion specifications.
• Organise mise‑en‑place and shift schedules together with the Chef de Partie.
• Complete daily checklists for mise‑en‑place, food storage, and hygiene.
• Report equipment failures and follow up on repairs.
• Assist in writing requisitions, wine, dry store, and food transfers for approval.
• Attend daily and monthly meetings with senior kitchen staff.
• Maintain a clean, tidy work area and ensure smooth handover to the next shift.
• Log accidents or sickness and report to senior chefs.
• Support the Chef de Cuisine in developing new recipes and menu ideas.

Required profile

• Ability to work punctualy in full uniform and with name badge.
• Good employee relations and ability to motivate colleagues.
• Attention to detail in following recipes, portion sizes and quality standards.
• Willingness to adhere to fire, hygiene and safety policies.
• Capability to check personal hygiene of junior kitchen staff.

Required skills

• Food preparation and cooking techniques for Middle Eastern & Moroccan cuisine.
• Mise‑en‑place planning and execution.
• Operation of standard kitchen equipment.
• Knowledge of food storage and safety procedures.
