Head Baker

About the role

Raffles Al Areen Palace Bahrain, an ultra-luxury property described as "The Palace of the Secret Garden" with 78 private pool villas, is looking for a Head Baker. The role covers busy banqueting, outside catering and volume production, with a focus on detail and presentation.

Key responsibilities

• Prepare and present a variety of Asian, Arabic and European quality breads and breakfast pastries.
• Handle multiple tasks and busy production while keeping an eye on detail and presentation.
• Give performance feedback to colleagues, report accidents and sickness to the Executive Sous Chef, and keep the Pastry Chef informed of issues and recommended actions.
• Stay up to date with culinary trends, propose improvements to quality and to lower production costs, and respond positively to changes in the department.
• Maintain discipline, safety procedures and hygiene, liaise with the Stewarding Team Leader on cleanliness, and ensure equipment is kept in good condition.
• Order, receive and store quality ingredients according to FIFO, prepare them to recipes and plating guides, and minimize waste to help the Culinary Team meet its targets.
• Follow HACCP guidelines and health and safety rules, perform daily storeroom inspections of walk-in refrigerators, reach-ins and dry stores, and carry out special projects asked by the Executive Chef.

Required profile

• Proven experience as a Head Baker or similar role in a high-end bakery, patisserie or hotel environment.
• Degree or diploma in Culinary Arts, Baking and Pastry or a related field preferred.
• Flexibility to work early mornings, late evenings, weekends and holidays.

Required skills

• Extensive knowledge of bread and pastry production, including sourdough, laminated dough and cake baking, plus decorating and finishing.
• Leadership and team management, with strong organization and multitasking skills.
• Creativity in recipe development and menu planning, and excellent communication skills.
