Head Baker – Luxury Cruise Line

About the role

The Head Baker at Silversea Cruises leads the onboard bakery operation, delivering artisan breads, viennoiserie and specialty dietary products to premium dining venues. This senior culinary position combines hands‑on baking with team leadership to ensure a memorable, luxury‑level guest experience at sea.

Key responsibilities

• Oversee daily production of breads, pastries and bakery items across all ship venues, including special events.
• Create high‑quality artisan products such as sourdough, laminated pastries, gluten‑free and regionally inspired specialties.
• Collaborate with the Executive Chef, Pastry Chef and Fleet Corporate Pastry Chef to develop and adapt recipes while adhering to company standards.
• Maintain strict quality, presentation and consistency for every bakery item.
• Ensure compliance with USPH, HACCP, ILO and ISO maritime safety and hygiene regulations.
• Manage inventory, control portions, reduce waste and support cost‑effective production planning.
• Train, supervise and mentor bakery staff, fostering professional growth and high standards.
• Engage with guests during culinary demonstrations and events to enhance the onboard experience.

Required profile

• Valid STCW95 certification.
• Proven experience as a Head Baker or Senior Baker in a luxury hotel, Michelin‑starred restaurant or cruise line.
• Advanced knowledge of artisanal bread baking, laminated doughs and modern dietary alternatives.
• Culinary degree or equivalent certification preferred.
• International hospitality or cruise ship experience is highly advantageous.
• Physically and medically fit with high moral integrity.
