Food & Beverage Manager

About the role

The Food & Beverage Manager will lead all F&B venues within Mantis’ eco‑focused hotels and lodges, ensuring exceptional guest experiences while driving profitability and sustainability. This senior‑level position combines operational oversight, financial management, and team leadership in a conservation‑driven hospitality environment.

Key responsibilities

• Oversee daily operations of all food and beverage outlets, maintaining high service standards.
• Develop and execute revenue‑generating strategies, promotions and upselling initiatives.
• Prepare, monitor and control departmental budgets, forecasts and P&L statements.
• Implement cost‑control measures for food, beverage, labor and operational expenses.
• Maintain and continuously improve SOPs, service standards and compliance with health, safety and brand regulations.
• Lead, coach and develop the F&B team to achieve operational excellence and high employee engagement.
• Build strong relationships with guests, suppliers and internal stakeholders to enhance service delivery.
• Analyse guest feedback and implement corrective actions to boost satisfaction.

Required profile

• Proven leadership experience in food and beverage operations within hotels or resorts.
• Strong financial acumen with experience managing budgets, forecasts and P&L.
• Passion for sustainable tourism and conservation‑focused hospitality.
• Excellent communication and stakeholder‑management skills.
